Jason and Kimberley bought their property "Sassafras" in 2005 and this allowed them to indulge in their passion for Belted Galloways. Kimberley had loved the breed from a very young age. Her family used to go for drives in the countryside and whenever they came across any Belties, her father would say "Look, inside out karate cows!" This joke never seemed to get old and it became a competition to find the cattle first.
When she got older and married Jason, they dreamed of buying some land to run her horses on and have a few cows and chooks. Jason's Grandfather had a property in the Hunter Valley and Jason grew up following him around, learning the ins and outs of farming. Kimberley told Jason about the "inside out karate cows" and how lovely they were. One day's research on the internet and showing Jason a few websites was all it took. These cattle practically sold themselves with all their attributes. Jason loved the fact that they were a quiet, medium sized breed that would eat all the grass (not just the good bits!).
At the Sydney Royal Easter Show, a talk with some very knowledgeable breeders sealed the deal and the stud's first Belties were soon in residence! When it came time to find their heifers a mate, the internet came in handy again, allowing the Astburys to meet Terry and Karen Peirce of Peppercorn Stud. With Peppercorn's help, Sassafras was well and truly established and the business was born.
